In case you weren’t aware, Ramenya Shima has consistently ranked within Tabelog’s top three ramen restaurants in Tokyo and in its top 100 restaurants list from 2021 to 2025, as well as nabbing several awards, making this spot a force to be reckoned with. The Hong Kong location stays true to its Japanese flagship restaurant by offering three signature broth varieties: shoyu, made with a special blend of soy sauces; white shoyu infused with white truffle oil and black truffle paste; and shio, for delicate flavours that highlight the natural flavours of the ingredients. Each ramen bowl comes topped with four varieties of chashu, alongside shrimp and pork wontons made by the restaurant every day.
