Two supremely talented chefs are heading to Test Kitchen between February 9 and 12 for a four-night taste extravaganza. Ben Orpwood, the former head chef at Sexy Fish in London, and Michael Hoepfl, the former executive chef at Pauly Saal in Berlin, are cooking up a multi-course treat for guests at the chic industrial space in Sai Ying Pun which opened early last year and organises regular special dinners with some of the world’s best up-and-coming culinary maestros.
These two chefs have joined forces over the past two years as they’ve been working together on an array of gastronomic projects. Both have carved a niche in modern European cuisine and fine dining but they’re also adept at sprinkling Japanese influences into their cooking. They’re planning to open a new restaurant together soon so the menu at Test Kitchen is a prototype for what they expect to serve up to hungry diners in the future.
Prepare for some excellent wine pairings alongside dishes like the uni crackers and tomato, the smoked raw bonito with brussels sprouts and seaweed sauce, the baby leek and duck egg royale and the black pudding dumpling with truffle sauce and chive oil. A must-enjoy is the roast pigeon with asparagus, smoked emulsion and roasted hazelnuts and diners also get to indulge in a double chocolate tofu to finish off their culinary journey.
The chefs knock up a 10-course tasting menu at Test Kitchen. Seating times are 7pm and 8.15pm, and the price is $1,380 a head, which includes the wine pairings. Test Kitchen is at 158A Connaught Road West and tickets can be ordered at testkitchen.com.hk.
