You can now get your yearly summer hit of watermelon via Milkcow because the dessert whizzes are bringing their limited edition watermelon ice cream sandwich to Melbourne.

And Milkcow is serious when they say watermelon. There’s no cakey, biscuit-based ice cream sandwiches here. Instead you’ll getting a hearty wedge of juicy watermelon with chocolate chip “seeds” filled with pretty pink watermelon soft serve and a sprinkle of pink Himalayan rock salt.

Plus it’s vegan, dairy-free and gluten-free meaning this is the closest you can come to calling an ice cream sandwich a health food.

Originally from South Korea, Milkcow have built up a reputation for serving super creamy, organic milk soft serve topped with things like fairy floss, jelly beans, macarons and their signature organic honey and honeycomb. This isn't the first time the Milkcow team have given Melbourne a quirky ice cream gift – they've previously celebrated International Bacon Day with a cholesterol-spiking Bacon Sundae.

The highly Instagrammable creation will be available for a limited run throughout summer. You can grab your own watermelon ice cream sandwich from Milkcow’s CBD store.

Have you been visited by Melbourne's liquid nitrogen ice cream food truck yet?
