Tucking into lobster is always an event – an ingredient so unanimously fancy that it’s usually reserved for only those most special of occasions. At gourmet fast-food joint Betty’s Burgers, fancy comes by way of its limited-edition lobster roll. These sandwiches – packed with fresh lobster meat, special mayo, shallots, chives and a generous squeeze of fresh lemon – have only ever been around for a good time, not a long time, having sold out in a flash every time they've been released.

But if any of Melbourne’s seafood aficionados missed out the first time around, Betty’s lobster roll is back for a victory lap and will be on offer at all 22 Australian stores from Thursday, February 13, including the four outlets now operating in Melbourne. They're $23 a pop, including a side of fries.

As with its first appearance, the lobster roll is strictly limited edition and will only be available while stocks last. If its debut is any indication, you’ll have less than a week before they’re gone once more.
