Gelato Messina is bringing back its luscious red velvet cookie pie

And of course, there is plenty of cream cheese custard

There are few baked treats as perfect as the red velvet cake. Chocolatey but not too chocolatey, with the most gorgeous red colour, red velvet is the king of cakes. And of course, the best part of red velvet cake is the cream cheese frosting - tangy, sweet and creamy. Famously, cream cheese frosting is also the best part of a carrot cake – but with red velvet, you can get at that frosting perfection without having to eat any vegetables.

The ice cream alchemists at Gelato Messina have taken all that deliciousness and packed it into a bake-at-home cookie pie. The centre of the cookie pie is a thick layer of cream cheese custard, so you're guaranteed plenty of oozy cream cheese goodness in every bite. The cookie pie format means more crispy top per bite as well, and since you bake it at home, it'll be fresh and hot right out of the oven. Top it with a scoop of your favourite ice cream and bliss out. 

Each cookie pie serves four to six (well, that's what Messina says, but if you want to eat it all yourself we won't tell), and you can order online and pick it up at a Gelato Messina store near you. Make sure you check the website because they sell out fast. A red velvet cookie pie with a 500ml tub of ice cream is $38.
