Having earned her reputation as one of the country’s finest dessert chefs, Philippa Sibley’s stint as head chef of CBD restaurant Syracuse has seen her wielding her savoury bat. But sometimes it’s nice to return to your roots.
Sibley will be throwing a one-night-only dessert degustation this November that’s set to be a “disco for the tastebuds”. The five-course meal will be matched with beverages from Syracuse’s team of sommeliers and kicks off with a strawberry soup with coconut sorbet, rhubarb and rose (a dish Sibley is calling ‘Snow White and Rose Red’).
The menu then moves onto a Meyer lemon tart, a pineapple tarte tatin, a ‘Syracuse Snickers’ and a ‘Teddy Bear’s Picnic’ which features a toasted lavender ice cream sandwich, pear sorbet, blueberry jam and honey.
