Tucked away underground in a breezy city basement on Russell Street, this secret spot serves up an 18-hour slow-cooked tonkotsu broth that’s so silky it’s practically air-whipped. The house-made Chikuho noodles are cooked just right, plus, you can customise your bowl to perfection, whether you prefer a light or extra rich broth and an array of toppings.
While tonkotsu is their bread and butter, this spring and summer, they’re dishing up a katsu curry tonkotsu ramen special. This epic mash-up combines two of Japan’s best: crispy chicken cutlets atop ramen in a velvety rich Japanese curry infused with pork bone broth and topped with a gooey marinated egg (ajitama). This slurpable sensation is so good, you’ll be bowled over.
