All's game at this winter feast
Are you game for game? Cutler and Co will be celebrating the diversity of Australian game in a special dinner highlighting Gippsland venison, wild fowl and kangaroo in a five-course, wine-matched dinner on August 12.
Head chef Colin Mainds is working together with the group's butcher, Troy Wheeler (of Meatsmith), to select the appropriate game for the menu. The dinner will include dishes like cold cut quail and apple matched with 2017 Stift Gœttweig Grüner Veltliner 'Messwein' from Kremstal; kangaroo tartare matched with 2016 Gueissard Bandol rosé; and a pressed terrine composed of guinea fowl, pheasant and pigeon accompanied by 2017 Lyra Pinot Noir from the Macedon Ranges. The matches have been determined by Leanne Altmann, the group's trailblazing beverage director, so you know the wines will kick arse.
