Listen, we all love a weekend getaway from NYC. But we're at the end of August, after weeks and months of road-tripping up to the Catskills and the Hamptons and New England. At this late point in summer, we want those famously fluffy upstate pancakes to come to us. And thankfully, Phoenicia Diner—that "hickster" favorite serving up locavore comfort eats and retro charm just west of Woodstock—is listening to our breakfast wishes and popping up in the no-road-trip-needed borough of Brooklyn for one weekend only next month.

New Yorkers know and love Phoenicia Diner, which was founded in Long Island in 1962 but moved to its current location in the Hudson Valley in the early 1980s, for its steaming stacks of pancakes and modern twists on old-school diner fare. Severance fans will also recognize the beloved restaurant as the filming location of the show's fictional Pip's Bar & Grille, where Mark (Adam Scott) and his sister Devon (Jen Tullock) dine in the second season of the Apple TV+ show.
And now you can get those famous pancakes in Williamsburg on Saturday, September 6th and Sunday, September 7, as part of a limited-time pop-up to promote the launch of the diner's new packaged pancake mixes, which are available in buttermilk, buckwheat and vegan options and ships nationwide. On Saturday from 9am to 3pm, Phoenicia is taking over the Kellogg's Diner at 518 Metropolitan Avenue; Sunday early birds can find the pop-up at Montague Diner (148 Montague Street) from 9am to noon.
Along with the aforementioned flapjacks, the Phoenicia pop-ups will feature other classic comfort foods, including funnel cakes, apple fritters and corn dogs, plus milkshakes to wash it all down. And given that you'll undoubtedly be in a food coma after all of that delicious feasting, you'll be plenty grateful that you're not stuck in that upstate-bound weekend traffic.
