Following the much-hyped Rhoda x St John nose-to-tail dinners and the current Balls pop-up, it’s refreshing to find a pop-up championing a more regional dish coming to Central.

Cow Wow is an event taking place at Wyndham Street bar Bao Bei, serving up bowls of beef brisket noodles – so get ready for some serious slurpage. Guests can customise their broth, choose from a selection of different noodles – from Shanghainese, to rice or flat noodles – and then chuck in some extras like beef tendon, beef balls and, for the more hardy, beef omasum, which is part of the stomach.

If that’s not enough protein for you, on the side you can choose from Chinese-brined beef shank, spicy ‘saliva’ chicken wings with century eggs, Chinese-brined soft-boiled eggs or ice plant with sesame dressing. As an added bonus there’s also a lucky draw to win a complimentary bowl at each seating – so check the sticker under your bowl to find out if you’re a winner.

The pop-up is open 12.30pm-5.30pm on the Saturday 9 December and midday-2pm and 5pm-7.30pm on Wednesday 13 and Thursday 14 December. While we weren’t so impressed with Bao Bei’s food when we visited for our review, perhaps this pop-up will be serve up something better. There’s only one way to find out... Sam Sinha
