Pirata Group's newest concept to preview at The Optimist

Pirata Group, the chaps behind TokyoLima, Pici, Pirata and The Optimist, are giving fans a sneak preview of new concept Meats, which celebrates all things meat, obvs. 

The meat bar, set to open next month on Staunton Street, will be popping up at top-drawer Spanish resto The Optimist, serving eager diners a set menu that will preview the carnivorous offerings. Sink your teeth into dishes such as lamb chops rubbed in coffee with homemade South Kentucky barbecue sauce or Iberian Presa – regarded as one of the best cuts of Iberian pork – served in a black garlic and miso butter with a side of crispy pork belly crackling, slow-roasted with Sichuan peppercorns.

Helmed by chef Paddy McDermott - he'll be butchering, cooking and carving some of the signature dishes at the pop-up, along with other plates such as sriracha steamed buns with crispy smoked bacon and tonkatsu sauce, beef bone marrow with anchovy butter and tarragon breadcrumbs, and coconut lime pie with coconut ice-cream for dessert. Sold. We'll MEAT you there, shall we?
