For those with an insatiable craving for regional Japanese cuisine then Nobu’s 'Gourmet Journey of Japan' should very much be on your radar.

The acclaimed Japanese restaurant is offering up a variety of specialty menus throughout 2018 highlighting cuisines from four Japanese islands: Kyushu, Shikoku, Honshu and Hokkaido. Inspired by local cooking on each island, the menus use fresh, seasonal ingredients to create a collection of authentic delicacies. The scrumptious journey begins with cuisines of Kyushu Island in the south of Japan starting and ending in Sapporo, Hokkaido up North.

The current 'Home to Fukuoka' menu features grilled saba fillet with kuro goma ponzu, kibinago sashimi with dried miso, whole sazae with garlic butter ponzu, toro shioyaki and uni gyoza with yuzu pepper mayonnaise. Bear in mind that this an Omakase menus so the chef on hand will be liberally expressing her/himself with said ingredients. The six-course lunch menu ($668 per person) and the eight-course dinner menu ($1,488 per person) are both available until February 11. The next specialty menu begins in March with the spotlight on Nagasaki cuisine. Rachel Wu.
