Sushi Mamoru, another new restaurant by the Yakinikumafia and Margo team, offers traditional Edomae sushi created by chef Hirofumi Chiba in Wan Chai. Sushi Mamoru is named after the Japanese word ‘protect’ to represent the chef’s commitment to safeguarding these centuries-old sushi traditions. The restaurant is offering a seasonal omakase experience that balances the art of tradition and adaptation really quite carefully with a Takumi Omakase (with over 20 dishes) that highlights seasonality and a Kiwami Omakase (short menu) available for lunch.
