Starting tomorrow, Rebel Blue in Windsor are launching a month-long menu dedicated to Greece's famous fried cheese dish, saganaki. Of course can you get the classic serving, a golden wedge of fried kefalograviera cheese served with oregano and a squeeze of lemon juice, but they're getting creative with four alternative servings that err on the sweet side. You can get your cheese with quince and fairy floss, with salted caramel popcorn, with figs and balsamic, or with Nutella and strawberries.

If you need savouries first, they're topping their hot chips with kefalograviera cheese as well as feta, roasted tomatoes and hot sauce; they're adding cheese to eggplant and tomatoes; and sprinkling feta over grilled prawns with roasted capsicum. Even meatballs are getting an extra cheesy makeover.

The "saganaki 9" will launch on Tuesday February 12 and run until Tuesday March 12, with each dish costing between $14 and $16.
