An immersive culinary art experience lands in the historic Union Bank, blending age-old chocolatier techniques with 3D printing, whisky pairings and cocktails

Renowned artist and chocolatier Ryan L Foote has swooped into the former Union Bank on Chapel Street to create an immersive pop-up dessert haven, inspired by Australia’s Gold Rush history and recent iron ore boom. 

Christened ‘Diamond Lab’ after the opulent eight-metre-long diamond-sculpted table that’s both the centrepiece of Foote’s exhibition and where visitors can partake in tastings of his sweet creations, the event offers Melburnians a one-of-a-kind sensory journey that blurs the lines between food, art and technology. 

The heritage venue makes for an extravagant backdrop for the signature dessert-art experience, with five-metre-high ceilings, distressed walls and an ingot-shaped golden oasis. You’ll be greeted with piles of red iron ore and golden rod installations upon entry, and a glittering array of other works await as you wander through the exhibition (which is 100 per cent free, FYI).

But if you’d like to take your experience to the next level, opt for the chocolate and whisky pairing at $45 per person, or the diamond dessert and cocktail pairing at $60 per person. 

You’ll indulge in 3D-formed chocolates featuring remarkable fractal and geometric forms and delicate infusions of Australian and Cantonese flavours, paired thoughtfully with drinks designed to elevate the sensory experience. Whether you’re a lover of contemporary art, chocolate or both, the experience is guaranteed to delight and inspire.
