K11 Musea is transforming its Sculpture Park into an open-air sky bar this month

Sunset-inspired cocktails, Asia’s top bars, and a front-row seat to the harbour view? We’ll drink to that

If your weekend ritual involves chasing the perfect sunset with a drink in hand, then you ought to make your way to K11 Musea this month. Transforming its sixth-floor Sculpture Park into an open-air sky bar named Sips by the Sea, the waterfront landmark is bringing a world-class roster of mixology talent to the city.

Running from May 16 to 31 on Fridays, weekends, and public holidays, this breezy pop-up experience has invited a crew of veterans from Asia’s 50 Best Bars to serve an exclusive lineup of drinks designed to mirror the sunset hues as day turns to night. Anchoring the entire pop-up period is Bangkok’s Opium Bar, which will be serving up two exclusive concoctions on Fridays, Sundays, and public holidays. Their first creation, Muse, is a vibrant butterfly pea gin sour that channels the romance of dusk with maraschino liqueur, fresh lemon juice, white crème de cacao and butterfly pea syrup. If you prefer something moodier, the Sea cocktail is a smoky pineapple-lime highball that flips the script by mixing mezcal and tepache with fresh lime juice, orange bitters, and soda.

Saturdays are reserved for guest shifts from some of the region’s most inventive mixologists. On May 16, Hong Kong’s own eco-conscious bar Socio takes over with Sundown, a playful, rum-based tipple infused with banana peel, macadamia distillate, pineapple, and pomegranate. They’ll also be shaking up their signature drink, Milk, which transforms leftover milk into house-made yoghurt to wash Widges Gin, layered with cumin liqueur, cucumber, guava soda, and finished with a milk curd crisp and a touch of cardamom perfume.

The tea obsessives at Tell Camellia will then step behind the bar on May 23 with Purple Sky, an atmospheric blend of lapsang tea, purple bud tea, lemon, and smoky vodka lifted by a bright drift of tropical pineapple. They’re also bringing along South of Jazz, a bold, velvety signature drink infused with duck fat, dulce de leche, pink guava, and jasmine tea. Rounding out the guest shifts on May 30 is Terry Kim, the award-winning mastermind behind Seoul’s whimsical, Alice in Wonderland-inspired speakeasy Alice Cheongdam. Kim will be pouring Mellow Dream, a fruit-forward gin sour laced with white grape, peach, mango, lemongrass, and cinnamon. Guests can also try Face to Vase, a signature sake and gin cocktail infused with eucalyptus, mango, and coriander.

Finally, it all ends with a huge closing party on June 6, presented in collaboration with the Social Club Series. The terrace will transform into a lively dancefloor complete with live DJ sets and drinks from an incredible international lineup, including Kyoto’s subversive speakeasy Bee’s Knees, Changsha’s technically advanced CMYK, and Ernest Hemingway-themed bar The Old Man Hong Kong.

Admission to the Sculpture Park is completely free, though the dedicated bar seating is reserved for those buying drinks. To join the grand finale on June 6, grab your tickets via raffpass.com.
