A classy cocktail bar and listening lounge has opened its doors within the just-renovated Saint Hotel

Melbourne audiophiles are well and truly being spoiled at the moment. In yet another example of a new bar opening with a next-level sound system, Stellas has set up shop within the recently rejuvenated Saint Hotel. Inspired by Japanese listening lounges, the chic space is minimalist and focused – come here to drink, come here to mingle and come here to be immersed in a sensory sound experience.

Loudspeakers by Pitt and Giblin (the Tassie duo responsible for the respective audio set-ups at Waxflower and Caretaker’s Cottage) cut imposing figures at the side of the room, sandwiching a luxe grey sofa you could happily sink into and drink all evening – cocktails, of course, for that’s what the folks behind the green marble bar sling best. 

They’ve curated an inventive signature selection based on seasonality and a no-waste approach to ingredients. You’ll detect a hint of native Australian flair here and there, in drinks such as the Channel Orange or the herbaceous My Golden Girl. If you’re a dark liquor lover, go for the Funky Kong: a drink that combines Starward Two Fold Whisky, Killik Silver Rum, coconut water, toasted koji and hot mole bitters. There’s also a slick selection of beer, wines, seltzers and spirits on offer.

When your appetite strikes, you won’t need to go downstairs for dinner. Stellas serves snacks designed to share and complement the drinks. Start with house-pickled crudités and freshly shucked oysters, before moving on to richer bites like the Macedon Ranges duck croquettes or the Grana Padano choux pastries oozing with mushroom duxelles. Mooloolaba prawn sandos and charcuterie and cheese plates may suit less curious palates, but the fresh Wagyu tartare on an oyster crisp is a revelation.

A rotating line-up of local and international DJ talent will work the decks (also designed by Pitt and Giblin) on Friday and Saturday nights until late, rewarding those who love their listening parties as ardently as they do their drinks. And really, the former is what you come here for. 

Though Stellas is open for walk-ins across Fridays and Saturdays only, the cocktail bar accepts bookings for private events at other times during the week.
