These restaurants are making killer ice cream sandwiches for one day only

Summer might be a ways off, but we’ll take any chance we can to go on a little mental holiday and pretend it's here. Luckily, a clutch of Melbourne venues are helping fuel your beach fantasies by making summer’s best treat (we won’t hear a word otherwise) for one glorious day.

Next Wednesday August 2 treat yourself to an ice cream sambo. Three Melbourne eateries are making these special treats – they're even calling them ice cream burgers, which we can only assume are like ice cream sandwiches, but turned all the way up to 11.

Head over to Huxtaburger for an ice cream burger made with a vanilla ice cream patty coated in Huxtacrunch (a secret in house crumbed biscuit recipe), drizzled with your choice of chocolate, strawberry, choc-mint, choc-orange or salted caramel sauce, and slapped between a Huxta-bun. Did we mention they’re only $1? Sound the bargain alarm!

Uncle’s two outposts in St Kilda and Collins Street have dialled it up a notch and will be serving a mango sorbet and coconut foam banh mi. You can nab this bonkers twist on the OG Vietnamese snack for $7.50.

Last but not least, drive through burger outlet St Kilda Burger Bar have three ice cream sandwiches on offer, each created by in house pastry chef Dan Grieff. The first includes Turkish delight ice cream with chunks of chocolate-coated, chewy Turkish delight bits wedged between two chocolate truffle biscuits. There’s also peanut butter and jelly, and a jam doughnut version on offer, all served alongside a range of Scoops and Smiles ice creams.
