Sydney’s hotel scene is relentlessly on the up. This year alone we’ve seen the doors open at both The Eve Hotel and 25 Hours Hotel The Olympia, adding a combined total of 211 rooms to the city’s already impressive line-up of luxury stays. Now, the details have dropped about Sydney’s next big opening, with InterContinental Sydney Coogee Beach due to open this December.
Set to be home to 198 guest rooms, a rooftop pool and a restaurant helmed by a celebrity chef, the property is claiming the title of “Sydney’s only luxury beachfront hotel”. We’re not totally sure that’s accurate – Manly Pacific fits the bill, and the Northern Beaches area is home to a couple of high-end oceanfront stays – but from what we know so far, the transformation of the former Crowne Plaza site will be pretty damn impressive.

First up, there’s the accommodation: 198 elevated rooms, including 22 ocean-facing suites complete with floor-to-ceiling windows, outdoor baths and spacious designer lounges. According to the team, the aesthetic will draw from the natural rhythm of the shoreline: curved, wave-like joinery, soft sun-washed whites and breezy open-plan spaces that welcome in the ocean air.
Honouring the Eastern Suburbs location, wellness will be seamlessly woven into every stay – with sunrise yoga sessions on the sand, treatments at the (soon-to-open) spa, and a private pickleball courts available to book for an afternoon hit before a swim in the rooftop pool.
And then, crucially, there’s the food. In a major coup for the Harbour City, beloved British chef Rick Stein (whose England-born seafood empire currently comprises just two Aussie outposts: at Bannisters Port Stephens and Bannisters by the Sea) will make his Sydney debut, with Rick Stein at Coogee Beach set to showcase Stein’s signature “fresh seafood, simply prepared” ethos. Also in the building, Shutters Restaurant and Bar will re-open alongside the hotel in December – serving modern Australian fare with a Mediterranean edge and an emphasis on locally-soured seasonal produce.
Phase two of the opening, slated for March 2026, will unveil the hotel’s spectacular leisure deck – complete with an ocean-facing infinity pool, a poolside bar and an outdoor event terrace. Phase two will also mark the launch of the hotel’s Club InterContinental, where VIP guests can expect breakfast, afternoon tea, twilight canapés and free-flowing wine.
