The season’s best truffle dishes to try in Hong Kong

Well, you’re just asking for truffle, aren’t you!

As the season for white truffle descends upon us all, this fragrant fungi has filled the air with its distinct, earthy aroma (it’s the truffle, we swear!). Fortunately for the truffle inclined, some of Hong Kong’s best restaurants are now offering some stellar white truffle dishes and menus that are worth foraging the city for. The season, which starts now and ends (usually) around the end of November to early December, sees some classic, and some creative dishes, and there’s even a cocktail to truly get your truffle on too.

Sitting at the top of LKF’s California Tower, Italian restaurant Aria is offering two dishes, the first of which is a ‘Tribute to Life’ ($688). And if it wasn’t obvious already, this dish is all about eggs: scrambled Livornese egg from Tuscany with potato mousseline, Baeri caviar and ikura, topped with Alba white truffle and a tuile dentelle for texture. The second dish is an aged risotto with Jerusalem artichoke, hairy crab seasoned with aged xeres vinegar, and white truffle shavings ($688). A box of selected white truffles is also available by the table for guests to choose and shave onto their favourite dishes ($98/gram and $88/gram for over ten grams).

Featuring seasonal dishes with a minimum of five grams of white truffle each, LucAle is offering four dishes for truffle fans. It all starts with a Scottona beef tartare ($580) which comes with egg, horseradish mayonnaise and puffed rice, and pumpkin cream with a 63 degree slow-cooked egg, Avezzano potato foam and, of course, shavings of Alba truffle ($480). A classic pasta dish of egg tagliolini with truffle ($580) for carb-fiends follows while Rossini’s beef tenderloin ($788) with spinach, foie gras, and truffle seals the deal. Wine pairings are also available to elevate the aromatics of all the dishes.

Introducing five truffle-infused a la carte dishes and one truffle-tastic cocktail for the season, French-Mediterranean restaurant LPM offers an eclectic selection of dishes. Highlights include the fresh housemade pasta with a choice of rigatoni, linguini, or gnocchi which is tossed in a creamy truffle oil sauce and enhanced further with white truffle shavings; burrata with white truffles, where the soft cheese is accented with nutty undertones of truffle; and white truffle eggs in which a distinct earthiness adds a touch of indulgence to the humble egg (all truffle dishes $838 each). If eating truffles weren’t enough, LPM is also serving them at the bar with a Delicatesse cocktail ($110), a truffle rendition of the Old Fashioned made with Diplomatico Riserva Rum, East India Sherry, nut bitters, truffle honey, and date balsamic vinegar.

New York-Italian restaurant Carbone is bringing white Alba truffles from Piedmont in Italy to the table where diners can select their preferred piece, whole or by the gram ($138/gram). On the menu, other truffle dishes such as the truffle fettuccine ($648), truffle and eggs on brioche ($498), and truffle tortellini ($748) with white truffle butter, sheep’s milk ricotta, and parmesan are sure to hit the truffle spot. To amplify the earthy experience, Carbone also offers wines cultivated from the same soil including Cordero Di Montezemolo ‘Elioro’ Chardonnay 1997 ($2,308) and Roberto Voerzio ‘Rocche dell’Annunziata Torriglione’ 2008 ($3,148) from Barolo.

Putting the finest Alba truffles to good use in two limited-edition menus, available Mondays to Saturdays for lunch and dinner, Castellana offers new truffle options which feature items such as Japanese tuna with fennel seeds, mustard and beetroot ‘bottarga’, Italian Dolomite mountain egg meringue with soft egg yolk, homemade tagliolini with organic mountain butter sauce, Brittany blue lobster with leek cream and smoked potatoes, and more. All dishes include three grams of white truffle, so you just need to choose between the four-course menu with dessert ($1,580) or seven-course menu ($1,980). Wine pairings for each are also available for extra indulgence (from $2,080 to $2,880).

Available at Spasso, DiVino, and DiVino Patio, the DiVino restaurant group is showcasing a truffle dining experience that offers ‘No Menu, No Limitations, No Rules’ to truly enjoy these fragrant fungi. Using Alba’s finest in dishes such as homemade egg tagliolini with brown butter, or carnaroli risotto Gran Riserva with Castelmagno cheese, bone marrow, and a Barolo wine reduction at Spasso; poached and roast corn-fed organic chicken breast, salsify, foie gras topped with Madeira sauce at DiVino Patio; and beef tenderloin carpaccio with slow-cooked egg cream, mâche salad, and Grana Padano shavings at DiVino, to name just a few.

At Tuscan trattoria, Associazione Chianti, optional shavings of white truffle and truffle butter are available by the table and can be added to any of their menu and steak options. Meanwhile, other seasonal dishes such as tagliatelle with butter and white truffle ($218), and a creamy truffle polenta ($108) with mixed mushrooms and white truffle is available. Both items are recommended to go with an extra two grams of white truffle ($138/gram). Here, wine pairings are also suggested, with an Il Borro Lamelle Chardonnay 2018 ($628), and Antinori Tignanello 1988 ($2,988) said to add layers of flavour to elevate the Italian truffle experience.

Working with one of the greatest producers of Barolo wine in Italy comes with its perks, especially since they’re also one of the smallest and most renowned truffle hunters. As a result, 208 Duecento Otto benefits from fresh Langhe truffles on a weekly basis. The Italian restaurant is offering a collection of items topped with five grams of Alba white truffle including Japanese scrambled eggs ($448), homemade tagliolini with 30 egg yolks and artisanal butter ($488), an eight-inch cheese pizza with fontina and buffalo mozzarella ($468), and Eggnog a la minute with Soave Recioto ($418). Extra servings of white truffle are also available ($75/gram).
